Prije koji mjesec prenijeli smo vam fantastičan recept za jedno "morsko" jelo od slanutka - slanutak s kozicama koji okusom podsjeća na buzaru, a dala nam ga je splitska chefica Jolanda Vitaljić. Danas vam nudimo još jedan "morski" slanutak po receptu druge splitske chefice, Ivane Gamulin, kćerke velikog meštra od kužine, Nikice Gamulina Game. Ivana je vlasnica i šefica poznatog splitskog restorana Villa Spiza, u svojoj kuhinji kuha domaće, svježe u ukusno, a ekipi Dobre hrane otkrila je recept za - brujet od slanutka.

Brujet od slanutka
Sastojci:
1,5 kg ribe za brujet - malo ugora, veliki mol, tabinja, grdobina, škarpun ili što se već nađe na peškariji
500 g slanutka
3 režnja češnjaka
2 mrkva
1 luk
komad korijen celera
komad pastrnjaka
bijelo suho vino
1-2 žlice šalše
peperončino
2-3 lista lovora
papar u zrnu
sol
Priprema:
Slanutak močiti preko noći, a potom isprati. U loncu pirjati jedan luk, dvije mrkve, tri češnjaka te malo korijena celera i pastrnjaka. Dodati slanutak, preliti vodom da bude dva-tri prsta iznad slanutka te začiniti s nekoliko listova lovora, jednim peperončinom i malo papra u zrnu. Posoliti i popapriti i kuhati polako dok se ne skuha slanutak. Procijediti.
U drugoj posudi staviti pirjati luk, dodati žlicu-dvije šalše te oko kilogram, kilogram i pol, razne ribe. Podliti s malo vina te vodom da prekrije ribu. Kada baci prvi ključ, smanjiti vatru te s vremena na vrijeme protresti. Kada je riba gotova (oko pobijeli), procijediti i očistiti meso od ribe te vratiti u temeljac, dodati oko 90 posto slanutka, a od ostatka štapnim mikserom napraviti kremu te je dodati u brujet kako bi bio gušći. Prije koji mjesec prenijeli smo vam fantastičan recept za jedno "morsko" jelo od slanutka - slanutak s kozicama koji okusom podsjeća na buzaru, a dala nam ga je splitska chefica Jolanda Vitaljić. Danas vam nudimo još jedan "morski" slanutak po receptu druge splitske chefice, Ivane Gamulin, kćerke velikog meštra od kužine, Nikice Gamulina Game. Ivana je vlasnica i šefica poznatog splitskog restorana Villa Spiza, u svojoj kuhinji kuha domaće, svježe u ukusno, a ekipi Dobre hrane otkrila je recept za - brujet od slanutka.

Brujet od slanutka
Sastojci:
1,5 kg ribe za brujet - malo ugora, veliki mol, tabinja, grdobina, škarpun ili što se već nađe na peškariji
500 g slanutka
3 režnja češnjaka
2 mrkva
1 luk
komad korijen celera
komad pastrnjaka
bijelo suho vino
1-2 žlice šalše
peperončino
2-3 lista lovora
papar u zrnu
sol
Priprema:
Slanutak močiti preko noći, a potom isprati. U loncu pirjati jedan luk, dvije mrkve, tri češnjaka te malo korijena celera i pastrnjaka. Dodati slanutak, preliti vodom da bude dva-tri prsta iznad slanutka te začiniti s nekoliko listova lovora, jednim peperončinom i malo papra u zrnu. Posoliti i popapriti i kuhati polako dok se ne skuha slanutak. Procijediti.
U drugoj posudi staviti pirjati luk, dodati žlicu-dvije šalše te oko kilogram, kilogram i pol, razne ribe. Podliti s malo vina te vodom da prekrije ribu. Kada baci prvi ključ, smanjiti vatru te s vremena na vrijeme protresti. Kada je riba gotova (oko pobijeli), procijediti i očistiti meso od ribe te vratiti u temeljac, dodati oko 90 posto slanutka, a od ostatka štapnim mikserom napraviti kremu te je dodati u brujet kako bi bio gušći.
