Proljeće je za dalmatinske gurmane u znaku janjetine. Za koji dan svi će je peći, bilo u pećnici, bilo na ražnju, no ne bi bio red preskočiti jedno dobro poznato i omiljeno jelo na žlicu - janjetinu s bižima.
Prave biži doduše još nisu ni procvjetale, ali zato su zamrznute sasvim dostupne i sasvim dovoljno dobre za ovo jelo, a što se janjetine tiče, nađete li domaću, ne biste se smjeli razočarati. Ipak, kako biste bili sigurni da je riječ o mesu najbolje kvalitete, pripazite da je meso svijetloružičaste boje, blagog i ugodnog mirisa, nježne teksture i ravnomjerno mramorirano.
Svakako se potrudite nabaviti dobar pršut i kvalitetnu pancetu za pešt, a jelo će vam biti najslađe ako ga pripremate s dobrim domaćim češnjakom poput onog čuvenog iz Ljubitovice.
Izazivaju li vam biži probavne tegobe, u teću pred kraj kuhanja dodajte i malo metvice - ne samo da će spriječiti nadutost nego će jelu dati profinjenu aromu koja se savršeno slaže s okusom graška.
Janjetina s bižima
Sastojci:
1 kg janjetine
850 g graška
150 ml bijelog vina
50 g pancete
30 g pršuta
2 luka
2 režnja češnjaka
2 žlice koncentrata rajčice
pola vezice peršina
malo cimeta i klinčića u prahu
ulja po potrebi
sol, papar
Priprema:
Najprije napravite pešt od pancete, pršuta, češnjaka i peršina.
Meso i luk narežite pa ih bacite na maslinovo ulje i dodajte im koncentrat rajčice te miješajte dok luk ne omekša.
Dodajte pešt, promiješajte i pustite da zamiriše pa zalijte vinom, pustite da ishlapi alkohol pa podlijte vodom (još bolje bi bilo koristiti mesni temeljac ili juhu) pa ubacite začine.
Kuhajte poklopljeno na laganoj vatri uz povremeno miješanje i dodavanje vode - tekućine treba biti toliko da prekriva meso.
Kad meso omekša dodajte grašak i kuhajte dok nije gotov. Provjerite treba li dodati još malo soli i papra te poslužite.

Proljeće je za dalmatinske gurmane u znaku janjetine. Za koji dan svi će je peći, bilo u pećnici, bilo na ražnju, no ne bi bio red preskočiti jedno dobro poznato i omiljeno jelo na žlicu - janjetinu s bižima.
Prave biži doduše još nisu ni procvjetale, ali zato su zamrznute sasvim dostupne i sasvim dovoljno dobre za ovo jelo, a što se janjetine tiče, nađete li domaću, ne biste se smjeli razočarati. Ipak, kako biste bili sigurni da je riječ o mesu najbolje kvalitete, pripazite da je meso svijetloružičaste boje, blagog i ugodnog mirisa, nježne teksture i ravnomjerno mramorirano.
Svakako se potrudite nabaviti dobar pršut i kvalitetnu pancetu za pešt, a jelo će vam biti najslađe ako ga pripremate s dobrim domaćim češnjakom poput onog čuvenog iz Ljubitovice.
Izazivaju li vam biži probavne tegobe, u teću pred kraj kuhanja dodajte i malo metvice - ne samo da će spriječiti nadutost nego će jelu dati profinjenu aromu koja se savršeno slaže s okusom graška.

2 žlice koncentrata rajčice

malo cimeta i klinčića u prahu
ulja po potrebi

Priprema:
Najprije napravite pešt od pancete, pršuta, češnjaka i peršina.
Meso i luk narežite pa ih bacite na maslinovo ulje i dodajte im koncentrat rajčice te miješajte dok luk ne omekša.
Dodajte pešt, promiješajte i pustite da zamiriše pa zalijte vinom, pustite da ishlapi alkohol pa podlijte vodom (još bolje bi bilo koristiti mesni temeljac ili juhu) pa ubacite začine.
Kuhajte poklopljeno na laganoj vatri uz povremeno miješanje i dodavanje vode - tekućine treba biti toliko da prekriva meso.
Kad meso omekša dodajte grašak i kuhajte dok nije gotov. Provjerite treba li dodati još malo soli i papra te poslužite.
