Jeste li više za odojka, za tuku ili pak za janjetinu? Ako ste se svrstali u prva dva "tima", dovest ćemo vas u napast da prijeđete u treći jer imamo fenomenalan recept za janjetinu, kao stvoren za ispraćaj Stare ili pak doček Nove godine. Dobili smo ga od slavnog splitskog kuhara Brace Sanjina za jedno od prosinačkih izdanja našeg priloga Stil. Toliko je dobar da nije na odmet još jednom ga se podsjetiti.
Braco nam je ponudio recept za jelo nadahnuto čuvenim dalmatinskim specijalitetom, janjetinom s bižima, samo što se u ovom slučaju ne radi o jelu koje se jede na žlicu, nego o vrlo zanimljivo pripremljenim janjećim bržolama.
Dekonstrukcija janjetine s bižima
Sastojci (za 4 osobe)
800 grama janjećih bržola
2 kilograma janjećih kostiju
60 grama dalmatinske pancete
200 grama luka
800 grama graška
150 grama mrkve
3 češnja češnjaka
150 mililitara pelata
200 grama krumpira
100 mililitara maslinovog ulja
peršin
sol, papar
Priprema:
Skuhajte temeljac od janjećih kostiju: u uzavrelu slanu vodu stavite kosti i kuhajte ih 45 min. Dok se temeljac kuha, očistite luk, narežite ga i stavite u lonac zajedno s pancetom pa dinstajte 10 minuta, zatim dodajte pelate i dinstajte 5 minuta pa dodajte narezanu mrkvu i češnjak te sol i papar pa podlijte temeljcem da prekrije sve sastojke u loncu. Kad su svi sastojci skuhani, procijedite i izblendajte. U drugom loncu, u temeljcu skuhajte krumpir narezan na kockice. U trećem, u temeljcu skuhajte grašak. Kada je grašak kuhan, procijedite ga i izblendajte uz dodatak maslaca dok ne dobijete kompaktnu kremu. Janjeće bržole začinite solju i paprom te prema svom ukusu ispecite na grill tavi (Braco preferira medium).

Jeste li više za odojka, za tuku ili pak za janjetinu? Ako ste se svrstali u prva dva "tima", dovest ćemo vas u napast da prijeđete u treći jer imamo fenomenalan recept za janjetinu, kao stvoren za ispraćaj Stare ili pak doček Nove godine. Dobili smo ga od slavnog splitskog kuhara Brace Sanjina za jedno od prosinačkih izdanja našeg priloga Stil. Toliko je dobar da nije na odmet još jednom ga se podsjetiti.
Braco nam je ponudio recept za jelo nadahnuto čuvenim dalmatinskim specijalitetom, janjetinom s bižima, samo što se u ovom slučaju ne radi o jelu koje se jede na žlicu, nego o vrlo zanimljivo pripremljenim janjećim bržolama.
Dekonstrukcija janjetine s bižima
Sastojci (za 4 osobe)
800 grama janjećih bržola
2 kilograma janjećih kostiju
60 grama dalmatinske pancete
200 grama luka
800 grama graška
150 grama mrkve
3 češnja češnjaka
150 mililitara pelata
200 grama krumpira
100 mililitara maslinovog ulja
peršin
sol, papar
Priprema:
Skuhajte temeljac od janjećih kostiju: u uzavrelu slanu vodu stavite kosti i kuhajte ih 45 min. Dok se temeljac kuha, očistite luk, narežite ga i stavite u lonac zajedno s pancetom pa dinstajte 10 minuta, zatim dodajte pelate i dinstajte 5 minuta pa dodajte narezanu mrkvu i češnjak te sol i papar pa podlijte temeljcem da prekrije sve sastojke u loncu. Kad su svi sastojci skuhani, procijedite i izblendajte. U drugom loncu, u temeljcu skuhajte krumpir narezan na kockice. U trećem, u temeljcu skuhajte grašak. Kada je grašak kuhan, procijedite ga i izblendajte uz dodatak maslaca dok ne dobijete kompaktnu kremu.
