Nitko ne voli prekuhanu odnosno prepečenu piletinu – suha je, žilava, tvrda i potpuno neukusna – ali svi smo slučajno jednom ili dvaput pretjerali s termičkom obradom te namirnice. Sličan nam se gaf, međutim, što je nešto manje poznato, može dogoditi i ako se zeznemo s mariniranjem. Smisao mariniranja je, podsjetimo, dati mesu više okusa, ali također i u tome da ga uz pomoć soli i kiselina poput jogurta, limunovog soka i octa, omekšamo i učinimo sočnijim. 

Za razliku od mariniranja drugih vrsta mesa, kod kojih je sasvim u redu pustiti marinadu da djeluje cijeli dan pa čak i dulje, mariniranje piletine trebalo bi trajati znartno kraće. Jer upravo je pretjerano izlaganje sastojcima iz marinade koji su zaslužni za poboljšavanje teksture jedan od glavnih razloga zašto u konačnici dobijemo meso koje je sve prije nego meko i sočno.

Budući da je piletina krto meso, brzo upija okus. To također znači da joj tekstura može brzo prijeći iz nježne i podatne u neprivlačno žilavu. Većina recepata na koje naiđete predlaže vrijeme mariniranja od šest sati ili čak preko noći, što je prihvatljivo, ali sve dulje od toga, pogotovo ako je marinada bogata kiselinom, nosi rizik od toga da u konačnici bude žilavije nego da ste preskočili mariniranje.

Također, nije loše napomenuti da ako poželite ostatkom marinade premazati meso dok se peče ili kuha, marinadu obavezno prokuhate, kako biste izbjegli opasnost od zaraze salmonelom.

Nitko ne voli prekuhanu odnosno prepečenu piletinu – suha je, žilava, tvrda i potpuno neukusna – ali svi smo slučajno jednom ili dvaput pretjerali s termičkom obradom te namirnice. Sličan nam se gaf, međutim, što je nešto manje poznato, može dogoditi i ako se zeznemo s mariniranjem. Smisao mariniranja je, podsjetimo, dati mesu više okusa, ali također i u tome da ga uz pomoć soli i kiselina poput jogurta, limunovog soka i octa, omekšamo i učinimo sočnijim. 

Za razliku od mariniranja drugih vrsta mesa, kod kojih je sasvim u redu pustiti marinadu da djeluje cijeli dan pa čak i dulje, mariniranje piletine trebalo bi trajati znartno kraće. Jer upravo je pretjerano izlaganje sastojcima iz marinade koji su zaslužni za poboljšavanje teksture jedan od glavnih razloga zašto u konačnici dobijemo meso koje je sve prije nego meko i sočno.

Budući da je piletina krto meso, brzo upija okus. To također znači da joj tekstura može brzo prijeći iz nježne i podatne u neprivlačno žilavu. Većina recepata na koje naiđete predlaže vrijeme mariniranja od šest sati ili čak preko noći, što je prihvatljivo, ali sve dulje od toga, pogotovo ako je marinada bogata kiselinom, nosi rizik od toga da u konačnici bude žilavije nego da ste preskočili mariniranje.

Također, nije loše napomenuti da ako poželite ostatkom marinade premazati meso dok se peče ili kuha, marinadu obavezno prokuhate, kako biste izbjegli opasnost od zaraze salmonelom.

Nitko ne voli prekuhanu odnosno prepečenu piletinu – suha je, žilava, tvrda i potpuno neukusna – ali svi smo slučajno jednom ili dvaput pretjerali s termičkom obradom te namirnice. Sličan nam se gaf, međutim, što je nešto manje poznato, može dogoditi i ako se zeznemo s mariniranjem. Smisao mariniranja je, podsjetimo, dati mesu više okusa, ali također i u tome da ga uz pomoć soli i kiselina poput jogurta, limunovog soka i octa, omekšamo i učinimo sočnijim. 

Za razliku od mariniranja drugih vrsta mesa, kod kojih je sasvim u redu pustiti marinadu da djeluje cijeli dan pa čak i dulje, mariniranje piletine trebalo bi trajati znartno kraće.
