Ako ste uvjereni da se pasta carbonara radi s tjesteninom, jajima, slaninom, parmezanom i vrhnjem za kuhanje - pogađajte ponovno. Možda je volite upravo takvu, ali kad vidite kako čuveno jelo s tjesteninom priprema ovaj kuhar, doći će vam želja za barem jednim pjatom carbonare - ali po njegovom receptu. A u tom receptu nema ni kapi vrhnja za kuhanje.

Kako to, možda se pitate, kad je carbonara tako lijepo kremasta? Tajna je u smjesi parmezana, jaja i vode od kuhanja tjestenine, koji, kad se spoje, stvaraju finu emulziju koja ovo jelo čini tako primamljivim. Dodat ćemo također kako je za najbolji uspjeh preporučljivo umjesto slanine koristiti guanciale (suhomesnati specijalitet od svinjskih obraza) i svježe ribani parmezan ili vrlo zreli pecorino.

Pasta carbonara

Sastojci:

250 g špageta
75 g parmezana
30 g guancialea
3 žumanjka
2 žlice maslinovog ulja
sol, papar

Priprema:

Skuhajte tjesteninu al dente.

Dok se tjestenina kuha, nasjeckajte i prepržite guanciale.

Odvojeno pomiješajte ribani parmezan sa žumanjcima, dodajte im svježe mljevenog papra i sasvim malo soli.

Kad je tjestenina gotova, ocijedite ju, a malo vode sačuvajte i odmah je dodajte smjesi sa sirom te dobro izmiješajte.

Tjesteninu prebacite u tavu sa slaninom, promiješajte, dodajte smjesu sa sirom i maknite s vatre. Miješajte dok ne postane kremasto i poslužite odmah.

Ako ste uvjereni da se pasta carbonara radi s tjesteninom, jajima, slaninom, parmezanom i vrhnjem za kuhanje - pogađajte ponovno. Možda je volite upravo takvu, ali kad vidite kako čuveno jelo s tjesteninom priprema ovaj kuhar, doći će vam želja za barem jednim pjatom carbonare - ali po njegovom receptu. A u tom receptu nema ni kapi vrhnja za kuhanje.

Kako to, možda se pitate, kad je carbonara tako lijepo kremasta? Tajna je u smjesi parmezana, jaja i vode od kuhanja tjestenine, koji, kad se spoje, stvaraju finu emulziju koja ovo jelo čini tako primamljivim. Dodat ćemo također kako je za najbolji uspjeh preporučljivo umjesto slanine koristiti guanciale (suhomesnati specijalitet od svinjskih obraza) i svježe ribani parmezan ili vrlo zreli pecorino.

Pasta carbonara

Sastojci:

250 g špageta
75 g parmezana
30 g guancialea
3 žumanjka
2 žlice maslinovog ulja
sol, papar

Priprema:

Skuhajte tjesteninu al dente.

Dok se tjestenina kuha, nasjeckajte i prepržite guanciale.

Odvojeno pomiješajte ribani parmezan sa žumanjcima, dodajte im svježe mljevenog papra i sasvim malo soli.

Ako ste uvjereni da se pasta carbonara radi s tjesteninom, jajima, slaninom, parmezanom i vrhnjem za kuhanje - pogađajte ponovno. Možda je volite upravo takvu, ali kad vidite kako čuveno jelo s tjesteninom priprema ovaj kuhar, doći će vam želja za barem jednim pjatom carbonare - ali po njegovom receptu. A u tom receptu nema ni kapi vrhnja za kuhanje.

Kako to, možda se pitate, kad je carbonara tako lijepo kremasta? Tajna je u smjesi parmezana, jaja i vode od kuhanja tjestenine, koji, kad se spoje, stvaraju finu emulziju koja ovo jelo čini tako primamljivim. Dodat ćemo također kako je za najbolji uspjeh preporučljivo umjesto slanine koristiti guanciale (suhomesnati specijalitet od svinjskih obraza) i svježe ribani parmezan ili vrlo zreli pecorino.

Pasta carbonara

Sastojci:

250 g špageta
75 g parmezana
30 g guancialea
3 žumanjka
2 žlice maslinovog ulja
sol, papar

Priprema:

Skuhajte tjesteninu al dente.

Dok se tjestenina kuha, nasjeckajte i prepržite guanciale.

Odvojeno pomiješajte ribani parmezan sa žumanjcima, dodajte im svježe mljevenog papra i sasvim malo soli.

Kad je tjestenina gotova, ocijedite ju, a malo vode sačuvajte i odmah je dodajte smjesi sa sirom te dobro izmiješajte.
