Kombinacijs s kojom ne možete pogriješiti su cheesecake, bijela čokolada i maline. Slaže se i Dubrovkinja Ana Srdoč, simpatična blogerica na čijem Instagram profilu Tirkizna Ana i blogu Tirkizna uvijek pronađemo neku dobru ideju. A ova nas je potpuno oduševila. Riječ je o cheesecakeu s prhkom podlogom od karameliziranog keksa i predivnim balansom okusa. Svakako ga isprobajte, a akio i sami imate dobar recept, javite nam na spiza@slobodnadalmacija.hr.
Cheesecake s malinama i bijelom čokoladom
Sastojci
Podloga
200 g Lotus Biscoff keksa
100 g rastopljenog maslaca
30 g rastopljene bijele čokolade
Krema
525 g Philadephia sira (3 paketa)
1 vanillin šećer
100 g šećera u prahu
250 ml slatkog vrhnja
2 listića želatine (ako želite, možete i bez)
100 g bijele čokolade
500 g svježih malina
Priprema
Za podlogu koristite obruč ili kalup za pečenje od 20 ili 22 cm. Kalup i stranice premažite maslacem. Obložite kalup i stranice kalupa papirom za pečenje. Za stranice možete koristiti i acetatnu foliju ukoliko je imate..Kekse usitnite u blenderu i sjedinite s rastopljenim maslacem. Utisnite kekse samo na dno kalupa (ja sam koristila staklenu čašu s ravnim dnom kako bi kekse ravnomjerno i dobro utisnula u kalup). Stavite na kratko u hladnjak dok ne pripremite kremu.
U manju zdjelu uspite hladnu vodu i potopite listić po listić želatine, ne morate je uopće koristiti ako ne želite (uvijek imam upite oko želatine, pa da znate unaprijed).
Na pari otopite 100 g bijele čokolade, ocijedite želatinu i promiješajte da se želatina otopi u čokoladi.U veću zdjelu stavite Philadelphia sir, šećere i miksajte da se sve poveže najmanjom brzinom.U drugoj zdjeli izmiksajte slatko vrhnje u čvrsti snijeg. Snijeg povežite sa kremom od sira i na kraju ukomponirajte rastopljenu bijelu čokoladu u kremu. Miksajte najmanjom brzinom da se sve sjedini.
Izvadite kalup iz hladnjaka i premažite ga uz pomoć kuhinjskog kista s 30 g rastopljene bijele čokolade. Bijela čokolada će vam sačuvati hrskavost keksa i zaštiti ga od vlage malina.Jedan dio malina pažljivo uz pomoć oštog noža prepolovite na pola. Redajte polovice malina oko obruča (odrezana strana malina ide na obruč), kada ste okružili obruč polovicama malina, na dno kalupa poredajte cijele maline. Trebat će vam oko 350 do 400 g malina.
Na maline pažljivo nanesite kremu i ravnomjerno je nanesite i zagladite. Omotajte prozirnom folijom i ostavite da se stisne u hladnjaku preko noći.
Sljedeći dan, pažljivo skinite papir za pečenje s dna i stranica kalupa. Smjestite pažljivo na ukrasni tanjur ili stalak za tortu. Gornji dio torte ukrasite ostatkom malina, listićima mente (po želji).Režite kriške tako da svaki put nož umočite u vruću vodu (obrišite oštricu svaki put prilikom rezanja).

Cheesecake s malinama i bijelom čokoladom
Sastojci
Podloga
200 g Lotus Biscoff keksa
100 g rastopljenog maslaca
30 g rastopljene bijele čokolade
Krema
525 g Philadephia sira (3 paketa)
1 vanillin šećer
100 g šećera u prahu
250 ml slatkog vrhnja
2 listića želatine (ako želite, možete i bez)
100 g bijele čokolade
500 g svježih malina
Priprema
Za podlogu koristite obruč ili kalup za pečenje od 20 ili 22 cm. Kalup i stranice premažite maslacem. Obložite kalup i stranice kalupa papirom za pečenje. Za stranice možete koristiti i acetatnu foliju ukoliko je imate..Kekse usitnite u blenderu i sjedinite s rastopljenim maslacem. Utisnite kekse samo na dno kalupa (ja sam koristila staklenu čašu s ravnim dnom kako bi kekse ravnomjerno i dobro utisnula u kalup). Stavite na kratko u hladnjak dok ne pripremite kremu.
U manju zdjelu uspite hladnu vodu i potopite listić po listić želatine, ne morate je uopće koristiti ako ne želite (uvijek imam upite oko želatine, pa da znate unaprijed).
Na pari otopite 100 g bijele čokolade, ocijedite želatinu i promiješajte da se želatina otopi u čokoladi.U veću zdjelu stavite Philadelphia sir, šećere i miksajte da se sve poveže najmanjom brzinom.U drugoj zdjeli izmiksajte slatko vrhnje u čvrsti snijeg. Snijeg povežite sa kremom od sira i na kraju ukomponirajte rastopljenu bijelu čokoladu u kremu. Miksajte najmanjom brzinom da se sve sjedini.
Izvadite kalup iz hladnjaka i premažite ga uz pomoć kuhinjskog kista s 30 g rastopljene bijele čokolade. Bijela čokolada će vam sačuvati hrskavost keksa i zaštiti ga od vlage malina.Jedan dio malina pažljivo uz pomoć oštog noža prepolovite na pola. Redajte polovice malina oko obruča (odrezana strana malina ide na obruč), kada ste okružili obruč polovicama malina, na dno kalupa poredajte cijele maline. Trebat će vam oko 350 do 400 g malina.
Na maline pažljivo nanesite kremu i ravnomjerno je nanesite i zagladite. Omotajte prozirnom folijom i ostavite da se stisne u hladnjaku preko noći.
Sljedeći dan, pažljivo skinite papir za pečenje s dna i stranica kalupa. Smjestite pažljivo na ukrasni tanjur ili stalak za tortu. Gornji dio torte ukrasite ostatkom malina, listićima mente (po želji).Režite kriške tako da svaki put nož umočite u vruću vodu (obrišite oštricu svaki put prilikom rezanja).
