Brza hrana koja se proizvodi u SAD-u obiluje kemikalijama koje ometaju rad endokrinog sustava, a povezane s raznim zdravstvenim problemima. Štetne su stvari pronađene u pilećim nuggetsima, hamburgerima i pizzama sa sirom.

Prva studija ove vrste, koja je mjerila koncentracije kemikalija poput ftalata u hrani i rukavicama iz američkih lanaca brze hrane, također je prva koja je otkrila plastifikator DEHT u brzoj hrani.

- Iz ranijih istraživanja znali smo da je konzumacija brze hrane povezana s višim razinama ftalata u ljudskim tijelima, ali naša studija je bila nova jer smo te namirnice zapravo prikupili iz mjesta brze hrane i izmjerili ih - rekla je autorica studije, doktorica Lariah Edwards, istraživačica na Milken Institute School of Public Health Sveučilišta George Washington u glavnom gradu Amerike.

Kemikalije koje se koriste u pakiranju hrane i opremi za njezinu preradu, ftalati kao što su DEHP i DnBP, mogu se unijeti u organizam i ometati proizvodnju hormona, objasnila je doktorica Edwards. Ove su kemikalije povezane sa širokim spektrom reproduktivnih, razvojnih, moždanih i imunoloških učinaka, kao i s dječjom pretilošću, astmom, rakom i kardiovaskularnim problemima.

U međuvremenu, umjesto ftalata korišteni su neftalatni ili zamjenski plastifikatori, od kojih su neki zabranjeni u određenim proizvodima. Ali ti plastifikatori nisu dobro proučeni, rekla je autorica studije, a posebno zabrinjava otkrivanje DEHT-a u brzoj hrani.

- Postoji vrlo ograničeno istraživanje za razumijevanje učinaka DEHT-a na ljudsko zdravlje u hrani, tako da smo izloženi prije nego shvatimo što taj plastifikator čini našem zdravlju. Gotovo kao da se izlažemo velikom eksperimentu - rekla je doktorica.

Studija je nedavno objavljena u časopisu Journal of Exposure Science & Environmental Epidemiology.

Kemikalija je najviše u brzoj hrani s mesom

Doktorica Edwards i njezini suradnici dobili su 64 uzorka hrane, uključujući hamburgere, krumpiriće, pileći 'nuggets', pileći burrito i pizzu sa sirom, kao i tri para nekorištenih rukavica iz šest različitih restorana brze hrane u San Antoniju u Teksasu.

Testirali su uzorke na 11 kemikalija, uključujući osam ftalata i tri zamjenska plastifikatora.

Istraživači su otkrili 10 od 11 kemikalija u uzorcima brze hrane. 81% hrane sadržavalo je DnBP, a 70% DEHP. 86% uzoraka sadržavalo je zamjenski plastifikator DEHT.

Općenito, uzorci brze hrane koji su sadržavali meso - uključujući pileće 'nuggetse', pileći burrito i hamburgere - sadržavali su veće razine ovih kemikalija, naglasila je Edwards.

- Poznato je da brza hrana nije najhranjivija, a sad znamo i da sadrži kemikalije kojima ne bismo smjeli biti izloženi - rekla je doktorica.

Doktorica savjetuje kupcima da kupuju hranu bez mesa ako žele smanjiti izloženost ftalatima u brzoj hrani, a nemaju mogućnost smanjenja konzumacije brze hrane. Zaključuje da je osobni izbor važan, ali da je politika ono što bi trebalo zaštiti građane, odnosno da treba uvesti strože propise.

Edwards je istaknula da je istraživanje bilo ograničeno malim uzorcima prikupljenim u jednom američkom gradu. Ograničenja u metodama ekstrakcije također su značila da su istraživači mogli otkriti kemikalije u rukavicama samo u visokim koncentracijama.

Brza hrana koja se proizvodi u SAD-u obiluje kemikalijama koje ometaju rad endokrinog sustava, a povezane s raznim zdravstvenim problemima. Štetne su stvari pronađene u pilećim nuggetsima, hamburgerima i pizzama sa sirom.

Prva studija ove vrste, koja je mjerila koncentracije kemikalija poput ftalata u hrani i rukavicama iz američkih lanaca brze hrane, također je prva koja je otkrila plastifikator DEHT u brzoj hrani.

- Iz ranijih istraživanja znali smo da je konzumacija brze hrane povezana s višim razinama ftalata u ljudskim tijelima, ali naša studija je bila nova jer smo te namirnice zapravo prikupili iz mjesta brze hrane i izmjerili ih - rekla je autorica studije, doktorica Lariah Edwards, istraživačica na Milken Institute School of Public Health Sveučilišta George Washington u glavnom gradu Amerike.

Kemikalije koje se koriste u pakiranju hrane i opremi za njezinu preradu, ftalati kao što su DEHP i DnBP, mogu se unijeti u organizam i ometati proizvodnju hormona, objasnila je doktorica Edwards. Ove su kemikalije povezane sa širokim spektrom reproduktivnih, razvojnih, moždanih i imunoloških učinaka, kao i s dječjom pretilošću, astmom, rakom i kardiovaskularnim problemima.

U međuvremenu, umjesto ftalata korišteni su neftalatni ili zamjenski plastifikatori, od kojih su neki zabranjeni u određenim proizvodima. Ali ti plastifikatori nisu dobro proučeni, rekla je autorica studije, a posebno zabrinjava otkrivanje DEHT-a u brzoj hrani.

- Postoji vrlo ograničeno istraživanje za razumijevanje učinaka DEHT-a na ljudsko zdravlje u hrani, tako da smo izloženi prije nego shvatimo što taj plastifikator čini našem zdravlju. Gotovo kao da se izlažemo velikom eksperimentu - rekla je doktorica.

Studija je nedavno objavljena u časopisu Journal of Exposure Science & Environmental Epidemiology.

Kemikalija je najviše u brzoj hrani s mesom

Doktorica Edwards i njezini suradnici dobili su 64 uzorka hrane, uključujući hamburgere, krumpiriće, pileći 'nuggets', pileći burrito i pizzu sa sirom, kao i tri para nekorištenih rukavica iz šest različitih restorana brze hrane u San Antoniju u Teksasu.

Testirali su uzorke na 11 kemikalija, uključujući osam ftalata i tri zamjenska plastifikatora.

Istraživači su otkrili 10 od 11 kemikalija u uzorcima brze hrane. 81% hrane sadržavalo je DnBP, a 70% DEHP. 86% uzoraka sadržavalo je zamjenski plastifikator DEHT.

Općenito, uzorci brze hrane koji su sadržavali meso - uključujući pileće 'nuggetse', pileći burrito i hamburgere - sadržavali su veće razine ovih kemikalija, naglasila je Edwards.

- Poznato je da brza hrana nije najhranjivija, a sad znamo i da sadrži kemikalije kojima ne bismo smjeli biti izloženi - rekla je doktorica.

Doktorica savjetuje kupcima da kupuju hranu bez mesa ako žele smanjiti izloženost ftalatima u brzoj hrani, a nemaju mogućnost smanjenja konzumacije brze hrane. Zaključuje da je osobni izbor važan, ali da je politika ono što bi trebalo zaštiti građane, odnosno da treba uvesti strože propise.

Edwards je istaknula da je istraživanje bilo ograničeno malim uzorcima prikupljenim u jednom američkom gradu. Ograničenja u metodama ekstrakcije također su značila da su istraživači mogli otkriti kemikalije u rukavicama samo u visokim koncentracijama.

Brza hrana koja se proizvodi u SAD-u obiluje kemikalijama koje ometaju rad endokrinog sustava, a povezane s raznim zdravstvenim problemima. Štetne su stvari pronađene u pilećim nuggetsima, hamburgerima i pizzama sa sirom.

Prva studija ove vrste, koja je mjerila koncentracije kemikalija poput ftalata u hrani i rukavicama iz američkih lanaca brze hrane, također je prva koja je otkrila plastifikator DEHT u brzoj hrani.

- Iz ranijih istraživanja znali smo da je konzumacija brze hrane povezana s višim razinama ftalata u ljudskim tijelima, ali naša studija je bila nova jer smo te namirnice zapravo prikupili iz mjesta brze hrane i izmjerili ih - rekla je autorica studije, doktorica Lariah Edwards, istraživačica na Milken Institute School of Public Health Sveučilišta George Washingt...
