Ako ste među onima koji ne mogu odoljeti da ne poližu žlicu ili metlicu miksera dok rade kolače, u opasnosti ste od zaraze opasnim patogenima. Mislite li da ste sigurni od salmonele jer koristite kupovna jaja od velikih proizvođača čije se nesilice redovito pregledavaju niste u pravu.

Osim jaja, koja su svima 'uobičajeni sumnjivci' zbog čestih epidemija salmonele, iz tijesta za kolače, a i iz poneke kreme, vreba bakterija Escherichia coli koja može izazvati teške infekcije. Nalazi se na brašnu na koje dospijeva tijekom transporta, a na pšenicu može dospjeti i prije nego je samljevena u brašno. No brašno i jaja nisu jedine namirnice koje bi vam u sirovom obliku mogle izazvati zdravstvene tegobe. Jedna od njih je krumpir, koji je problematičan zbog solanina. Već male količine tog spoja, koji se nalazi u kori, zelenom i proklijalom gomolju, mogu izazvati povraćanje, grčeve, glavobolju i artimiju, no ako je povrće termički obrađeno možete biti mirni.

Pripazite i kod pripreme graha i mahuna jer sadrže fitohemaglutinin koji izaziva simptome nalik trovanju hranom  - povraćanje, proljev, mučnina, grčevi. Budite sigurni da su vam mahunarke dobro skuhane, osobito crveni grah koji sadrži najviše razine problematičnog spoja. Opasni su i sirovo meso te mesne prerađevine poput hrenovki jer u njima vrebaju bakterije poput listerije koja izaziva teške infekcije središnjeg živčanog sustava, a u trudnoći može rezultirati pobačajem. Osim listerije, sirovo meso često je zaraženo bakterijama rodova Campylobacter, Salmonella, Clostridium perfringens i Yersinia koje sve odreda izazivaju zdravstvene tegobe.

Premda su pune zdravih sastojaka, problematične su i klice. Na zrnju koje klija u toplim i vlažnim uvjetima lako se namnože patogeni poput E. coli, salmonele i listerije pa bi vam grickanje klica umjesto zdravlja moglo donijeti bolest. Kako biste to spriječili, obavezno ih dobro isperite i pazite da su što svježije. Ako niste baš sigurni u uvjete u kojima su uzgojene i koliko su svježe, radije ih ubacite u vrelu juhu nego u salatu.

Ako ste među onima koji ne mogu odoljeti da ne poližu žlicu ili metlicu miksera dok rade kolače, u opasnosti ste od zaraze opasnim patogenima. Mislite li da ste sigurni od salmonele jer koristite kupovna jaja od velikih proizvođača čije se nesilice redovito pregledavaju niste u pravu.

Osim jaja, koja su svima 'uobičajeni sumnjivci' zbog čestih epidemija salmonele, iz tijesta za kolače, a i iz poneke kreme, vreba bakterija Escherichia coli koja može izazvati teške infekcije. Nalazi se na brašnu na koje dospijeva tijekom transporta, a na pšenicu može dospjeti i prije nego je samljevena u brašno. No brašno i jaja nisu jedine namirnice koje bi vam u sirovom obliku mogle izazvati zdravstvene tegobe. Jedna od njih je krumpir, koji je problematičan zbog solanina. Već male količine tog spoja, koji se nalazi u kori, zelenom i proklijalom gomolju, mogu izazvati povraćanje, grčeve, glavobolju i artimiju, no ako je povrće termički obrađeno možete biti mirni.

Pripazite i kod pripreme graha i mahuna jer sadrže fitohemaglutinin koji izaziva simptome nalik trovanju hranom  - povraćanje, proljev, mučnina, grčevi. Budite sigurni da su vam mahunarke dobro skuhane, osobito crveni grah koji sadrži najviše razine problematičnog spoja. Opasni su i sirovo meso te mesne prerađevine poput hrenovki jer u njima vrebaju bakterije poput listerije koja izaziva teške infekcije središnjeg živčanog sustava, a u trudnoći može rezultirati pobačajem. Osim listerije, sirovo meso često je zaraženo bakterijama rodova Campylobacter, Salmonella, Clostridium perfringens i Yersinia koje sve odreda izazivaju zdravstvene tegobe.

Premda su pune zdravih sastojaka, problematične su i klice. Na zrnju koje klija u toplim i vlažnim uvjetima lako se namnože patogeni poput E. coli, salmonele i listerije pa bi vam grickanje klica umjesto zdravlja moglo donijeti bolest. Kako biste to spriječili, obavezno ih dobro isperite i pazite da su što svježije. Ako niste baš sigurni u uvjete u kojima su uzgojene i koliko su svježe, radije ih ubacite u vrelu juhu nego u salatu.
