Kažu da je slično kao meso i da se od njega da skuhati gulaš. Ili toć. A može, kažu, i u sendvič i u tacose. Meni je to bilo sasvim dovoljno razloga da ga potražim, kupim i isprobam. Glupom imenu usprkos. Jer ovdje je riječ o jackfruitu, ogromnom plodu za kojim su poludjeli vegani, a nakon njega i svi drugi skloni čudnim, novim namirnicama.
Malo guglanja i doznala sam da je Jack u imenu završio sasvim slučajno jer je biljka, na svom dugom putu s Indijskog potkontinenta na Zapad, prošla kroz puno spretnih ruku uz koje nisu išli jednako spretni jezici. Naziv u originalu glasi chakka, ali Portugalci su to izgovarali jaca, da bi Britanci na kraju sve pokvarili s jackfruit.

S tako lošim marketingom - jer jackfruit, bar meni, 'baca' na jackass - pravo bi čudo bilo što se 'primio' da nije jedne stvari: stvarno je ukusan. Kad je zreo, ima okus na kombinaciju banane, ananasa i manga, što vam ne mogu posvjedočiti, a kad je skuhan... e pa to ću vam otkriti malo kasnije. Ili još bolje, otkrijte sami.

Jer ipak ga se isplati probati. Nije da je baš rentabilan, jer malo pakiranje od 500 grama košta oko 35 kuna. Skuplje i od teletine. Ali nemojte razmišljati na taj način. Mislite na nove okuse, nova iskustva. Nešto novo, nešto divlje.
Sad ga već možete naći i u trgovinama zdrave hrane, ja sam ga našla u jednoj u jednom od splitskih trgovačkih centara. Kad sam došla kući, otvorila sam kutiju pa vrećicu u koju je spakiran pa skeptično pomirisala. Nije smrdjelo, ali se ipak nisam odvažila gricnuti ga onako sirovog.

Najprije sam ispitala teksturu stisnuvši jednu kockicu. Negdje između čvrstog i gnjecavog, donekle nalik na kuhano povrće. Samo što je sirov. Boja: maksimalno neprivlačno sivkasta. Zaključila sam da mi ga je najbolje pripremiti na toć, s puno kapule. Za svaki slučaj.
Dodala sam i mrkvu te malo koncentrata rajčice, no suzdržala sam se od začina, osim malo ružmarina, jer mu nisam željela odmah u korjenu sasjeći aromu. Iz istog sam razloga preskočila i mariniranje, kojeg neki preporučuju. Počela sam kuhati i sve je izgledalo normalno. Evo i dokaza.

Nisam ga predugo kuhala, jer zapravo nije sirov, tek toliko da se mrkvica smekša. Probala sam malo. Nije bilo grozno. Falilo je soli. Kao prilog sam skuhala rižu, posula sve sezamom da ljepše izgleda na fotografijama i eto mog zdravog i neobičnog, a vrlo trendy obroka. I sad bih vam trebala otkriti kakvog je okusa.
Pa... s mesom nema nikakve veze. Tko kaže drugačije, laže. Osjećaju se note na tragu sredine artičoka, najblažih zamislivih balancana, previše puta ispranih gljiva iz konzerve, možda čak i smole (ne bi bilo čudno da sam u pravu, s obzirom da zreli jackfruit 'daje' na mango).

Je li dobar? Je. Je li kao meso? Meni nije, ali prije konačne presude odlučila sam se konzultirati sa svojim mačkom. Dala sam mu komadić, a on mi je uputio pogled koji je govorio više od riječi, čak i grubih. Dakle, odgovor na zadnje pitanje, pitate li nas dvoje glasi: definitivno nije.
Za utjehu mu ostaje (jackfruitu, a ne mačku) da je pun vlakana, kalija, magnezija, vitamina A, B i C te uopće ne sadrži zasićene masti i šećere. Na pomalo 'blank' okus može se gledati i kao na prednost, jer jackfruit može biti (skoro) sve što poželite: curry i chilli, nadjev za povrće i tacose, pitu i pizzu, pa čak i spring rollse, a ako vam nije problem same sebe zavaravati, recimo da je na tragu pulled pork svinjetine, barem po teksturi.

Kažu da je slično kao meso i da se od njega da skuhati gulaš. Ili toć. A može, kažu, i u sendvič i u tacose. Meni je to bilo sasvim dovoljno razloga da ga potražim, kupim i isprobam. Glupom imenu usprkos. Jer ovdje je riječ o jackfruitu, ogromnom plodu za kojim su poludjeli vegani, a nakon njega i svi drugi skloni čudnim, novim namirnicama.
Malo guglanja i doznala sam da je Jack u imenu završio sasvim slučajno jer je biljka, na svom dugom putu s Indijskog potkontinenta na Zapad, prošla kroz puno spretnih ruku uz koje nisu išli jednako spretni jezici. Naziv u originalu glasi chakka, ali Portugalci su to izgovarali jaca, da bi Britanci na kraju sve pokvarili s jackfruit.

S tako lošim marketingom - jer jackfruit, bar meni, 'baca' na jackass - pravo bi čudo bilo što se 'primio' da nije jedne stvari: stvarno je ukusan. Kad je zreo, ima okus na kombinaciju banane, ananasa i manga, što vam ne mogu posvjedočiti, a kad je skuhan... e pa to ću vam otkriti malo kasnije. Ili još bolje, otkrijte sami.

Jer ipak ga se isplati probati. Nije da je baš rentabilan, jer malo pakiranje od 500 grama košta oko 35 kuna. Skuplje i od teletine. Ali nemojte razmišljati na taj način. Mislite na nove okuse, nova iskustva. Nešto novo, nešto divlje.
Sad ga već možete naći i u trgovinama zdrave hrane, ja sam ga našla u jednoj u jednom od splitskih trgovačkih centara. Kad sam došla kući, otvorila sam kutiju pa vrećicu u koju je spakiran pa skeptično pomirisala. Nije smrdjelo, ali se ipak nisam odvažila gricnuti ga onako sirovog.

Najprije sam ispitala teksturu stisnuvši jednu kockicu. Negdje između čvrstog i gnjecavog, donekle nalik na kuhano povrće. Samo što je sirov. Boja: maksimalno neprivlačno sivkasta. Zaključila sam da mi ga je najbolje pripremiti na toć, s puno kapule. Za svaki slučaj.
Dodala sam i mrkvu te malo koncentrata rajčice, no suzdržala sam se od začina, osim malo ružmarina, jer mu nisam željela odmah u korjenu sasjeći aromu. Iz istog sam razloga preskočila i mariniranje, kojeg neki preporučuju. Počela sam kuhati i sve je izgledalo normalno. Evo i dokaza.

Nisam ga predugo kuhala, jer zapravo nije sirov, tek toliko da se mrkvica smekša. Probala sam malo. Nije bilo grozno. Falilo je soli. Kao prilog sam skuhala rižu, posula sve sezamom da ljepše izgleda na fotografijama i eto mog zdravog i neobičnog, a vrlo trendy obroka. I sad bih vam trebala otkriti kakvog je okusa.
Pa... s mesom nema nikakve veze. Tko kaže drugačije, laže. Osjećaju se note na tragu sredine artičoka, najblažih zamislivih balancana, previše puta ispranih gljiva iz konzerve, možda čak i smole (ne bi bilo čudno da sam u pravu, s obzirom da zreli jackfruit 'daje' na mango).

Je li dobar? Je. Je li kao meso? Meni nije, ali prije konačne presude odlučila sam se konzultirati sa svojim mačkom. Dala sam mu komadić, a on mi je uputio pogled koji je govorio više od riječi, čak i grubih. Dakle, odgovor na zadnje pitanje, pitate li nas dvoje glasi: definitivno nije.
Za utjehu mu ostaje (jackfruitu, a ne mačku) da je pun vlakana, kalija, magnezija, vitamina A, B i C te uopće ne sadrži zasićene masti i šećere. Na pomalo 'blank' okus može se gledati i kao na prednost, jer jackfruit može biti (skoro) sve što poželite: curry i chilli, nadjev za povrće i tacose, pitu i pizzu, pa čak i spring rollse, a ako vam nije problem same sebe zavaravati, recimo da je na tragu pulled pork svinjetine, barem po teksturi.
