Danas je dan od bakalara. Postili, ne postili, ako ikako možete danas ćete se mašiti barem za koju žlicu obožavane delicije. Samo koji je najbolji? Na brujet ili bjanko? Mi se ne možemo odlučiti, a ako i vi imate problema s tom odlukom ili pak ako tražite dobar recept, donosimo vam ih i za jedan i za drugi pa birajte. U nastavku ćete pronaći i treći, za one željne eksperimentiranja, nama se svidio jer kombinira bakalar sa jednom zdravom i jeftinom namirnicom koja je donedavno slovila za siromašku, a u zadnje vrijeme je vrlo popularna i sjajna je zamjena za krumpir, ako ga iz nekog razloga zaobilazite.
Ali idemo po redu. Najprije bakalar na brujet i to po receptu koji smo dobili od Anke Slišković, iskusne kuharice čiji nam je Instagram omiljeni izvor nadahnuća za dobru, domaću spizu.

Bakalar na brujet
Sastojci:
600 g bakalara
300 g krompira
4-5 režnjeva češnjaka
1 vezica peršina
1 žlica konšerve
1 dcl bilog vina
2 dcl maslinovog ulja
Sol, papar, vegeta
Priprema:
Bakalar namačite najmanje 24 sata uz obveznu promjenu vode nekoliko puta. Zatim ga dobro isperite i stavite kuhati dok se meso ne počne odvajati od kosti. Kada je bakalar kuhan, procijedite ga, a vodu u kojoj se kuhao ostavite za daljnju pripremu. Očistite bakalar od kože i kostiju.
Krumpir narežite na ploške, a češnjak i peršin nasjeckajte na sitne komadiće. U širi lonac slažite red bakalara, red krumpira, i tako sve dok ne napunite lonac. Izmiješajte maslinovo ulje, bijelo vino i pastu od rajčice. Smjesi dodajte češnjak, peršin, sol i papar pa je dodajte u bakalar. Sve zalijte vodom u kojoj se bakalar kuhao i lagano kuhajte dok ne omekša uz povremeno protresanje lonca.
Što se tiče bakalara bjanko, tu su nema velike filozofije, ali evo vam recept.

Bakalar bjanko
Sastojci:
800 g krumpira
400 g bakalara
4 režnja češnjaka
pola vezice peršina
malo bijelog vina
maslinovo ulje
sol, papar
Priprema:
Namočeni bakalar stavite u lonac hladne vode pa ga kuhajte desetak minuta nakon što zavrije. Izvadite ga i malo ohladite, a vodu sačuvajte. Ogulite ga i očistite pa ga natrgajte na komade.
Ogulite krumpir i narežite ga na ploške. Češnjak i peršin nasjeckajte.
Na zagrijanom ulju prodinstajte češnjak i peršin, kad zamiriše dodajte bakalar pa zalijte vodom od kuhanja i dolijte malo vina. Kad zakuha ubacite krumpir i kuhajte dok se krumpir ne skuha, a bakalar je još mrvicu tvrd. Odlijte oko 2/3 tekućine (sačuvajte je pa koristite kao temeljac, dobra je i za kuhanje riže, a možete je i zamrznuti).
Popaprite, provjerite je li dovoljno slano pa teću poklopite i snažno protresite par puta. Ako vam je to teško, pomozite se gnječilicom za pire ili štapnim mikserom. Prije posluživanja prelijte s još malo maslinovog ulja.

Bakalar sa slanutkom
Sastojci
400 g fileta bakalara
300 grama kuhanog slanutka
100 ml bijelog vina
50 ml maslinovog ulja
2 režnja češnjaka
peršin
sol, papar
Priprema:
Zakuhajte oko 200 ml vode, ubacite bakalar i kuhajte 7-8 minuta, dok ne pobijeli.
Dodajte slanutak i vino, nasjeckani češnjak i peršin, sol i papar pa kuhajte još 5-6 minuta.
Provjerite okus i dotjerajte ga po potrebi pa izdvojite par žlica slanutka i izblendajte ih s uljem. Vratite u jelo, promiješajte i poslužite.

Danas je dan od bakalara. Postili, ne postili, ako ikako možete danas ćete se mašiti barem za koju žlicu obožavane delicije. Samo koji je najbolji? Na brujet ili bjanko? Mi se ne možemo odlučiti, a ako i vi imate problema s tom odlukom ili pak ako tražite dobar recept, donosimo vam ih i za jedan i za drugi pa birajte. U nastavku ćete pronaći i treći, za one željne eksperimentiranja, nama se svidio jer kombinira bakalar sa jednom zdravom i jeftinom namirnicom koja je donedavno slovila za siromašku, a u zadnje vrijeme je vrlo popularna i sjajna je zamjena za krumpir, ako ga iz nekog razloga zaobilazite.
Ali idemo po redu. Najprije bakalar na brujet i to po receptu koji smo dobili od Anke Slišković, iskusne kuharice čiji nam je Instagram omiljeni izvor nadahnuća za dobru, domaću spizu.

Bakalar na brujet
Sastojci:
600 g bakalara
300 g krompira
4-5 režnjeva češnjaka
1 vezica peršina
1 žlica konšerve
1 dcl bilog vina
2 dcl maslinovog ulja
Sol, papar, vegeta
Priprema:
Bakalar namačite najmanje 24 sata uz obveznu promjenu vode nekoliko puta. Zatim ga dobro isperite i stavite kuhati dok se meso ne počne odvajati od kosti. Kada je bakalar kuhan, procijedite ga, a vodu u kojoj se kuhao ostavite za daljnju pripremu. Očistite bakalar od kože i kostiju.
Krumpir narežite na ploške, a češnjak i peršin nasjeckajte na sitne komadiće. U širi lonac slažite red bakalara, red krumpira, i tako sve dok ne napunite lonac. Izmiješajte maslinovo ulje, bijelo vino i pastu od rajčice. Smjesi dodajte češnjak, peršin, sol i papar pa je dodajte u bakalar. Sve zalijte vodom u kojoj se bakalar kuhao i lagano kuhajte dok ne omekša uz povremeno protresanje lonca.
Što se tiče bakalara bjanko, tu su nema velike filozofije, ali evo vam recept.

Bakalar bjanko
Sastojci:
800 g krumpira
400 g bakalara
4 režnja češnjaka
pola vezice peršina
malo bijelog vina
maslinovo ulje
sol, papar
Priprema:
Namočeni bakalar stavite u lonac hladne vode pa ga kuhajte desetak minuta nakon što zavrije. Izvadite ga i malo ohladite, a vodu sačuvajte. Ogulite ga i očistite pa ga natrgajte na komade.
Ogulite krumpir i narežite ga na ploške. Češnjak i peršin nasjeckajte.
Na zagrijanom ulju prodinstajte češnjak i peršin, kad zamiriše dodajte bakalar pa zalijte vodom od kuhanja i dolijte malo vina. Kad zakuha ubacite krumpir i kuhajte dok se krumpir ne skuha, a bakalar je još mrvicu tvrd. Odlijte oko 2/3 tekućine (sačuvajte je pa koristite kao temeljac, dobra je i za kuhanje riže, a možete je i zamrznuti).
Popaprite, provjerite je li dovoljno slano pa teću poklopite i snažno protresite par puta. Ako vam je to teško, pomozite se gnječilicom za pire ili štapnim mikserom. Prije posluživanja prelijte s još malo maslinovog ulja.

Bakalar sa slanutkom
Sastojci
400 g fileta bakalara
300 grama kuhanog slanutka
100 ml bijelog vina
50 ml maslinovog ulja
2 režnja češnjaka
peršin
sol, papar
Priprema:
Zakuhajte oko 200 ml vode, ubacite bakalar i kuhajte 7-8 minuta, dok ne pobijeli.
Dodajte slanutak i vino, nasjeckani češnjak i peršin, sol i papar pa kuhajte još 5-6 minuta.
Provjerite okus i dotjerajte ga po potrebi pa izdvojite par žlica slanutka i izblendajte ih s uljem. Vratite u jelo, promiješajte i poslužite.
