Unatoč tome što rijetko koji recept za jela od mesa kao prvi korak pripreme navodi njegovo ispiranje, mnogi toj praksi ipak pribjegavaju. Motiv je jasan, žele se riješiti nečistoća i bakterija, no umjesto da takvim postupkom smanje rizik od zaraze bolestima koje se prenose hranom, zapravo ga povećavaju.

Sirovo meso može biti izvor štetnih mikroorganizama i patogena kao što su Salmonella, E. coli i Listeria stoga je oprez neophodan, posebno kad se priprema piletina koja im je osobito podložna. Dakle, što manje površina i pribora meso dodiruje, to bolje, a nakon rukovanja sirovim mesom potrebno je oprati sve potencijalno kontaminirane površine. Ali ne i meso.

Kada se sirovo meso nađe pod mlazom vode, mikroorganizmi koji mu se nalaze na površini mogu prijeći na sudoper i proširiti se po okolnim područjima, prema nekim istraživanjima i do metar udaljenima. Slikoviti: kad perete meso, zapravo prskate klice po kuhinji. 

Studija USDA-e, koja je, doduše, uzela u obzir samo piletinu, pokazala je da se osobe koje peru sirovo meso peradi izlažu većem riziku od bolesti koje se prenose hranom od onih koji to ne rade. Stručnjaci su po ovom pitanju složni i preporučuju da se sirovo meso ne pere jer od toga može biti više štete nego koristi.

Jasno, postoje određene iznimke. Što ako vam je meso palo na pod? 

U tom je slučaju uputno meso oprati, ali u posudi s vodom, a ne pod mlazom, te vodu iskrenuti izravno u slivnik ili u WC školjku te ih, zajedno s posudom, dezinficirati.

Unatoč tome što rijetko koji recept za jela od mesa kao prvi korak pripreme navodi njegovo ispiranje, mnogi toj praksi ipak pribjegavaju. Motiv je jasan, žele se riješiti nečistoća i bakterija, no umjesto da takvim postupkom smanje rizik od zaraze bolestima koje se prenose hranom, zapravo ga povećavaju.

Sirovo meso može biti izvor štetnih mikroorganizama i patogena kao što su Salmonella, E. coli i Listeria stoga je oprez neophodan, posebno kad se priprema piletina koja im je osobito podložna. Dakle, što manje površina i pribora meso dodiruje, to bolje, a nakon rukovanja sirovim mesom potrebno je oprati sve potencijalno kontaminirane površine. Ali ne i meso.

Kada se sirovo meso nađe pod mlazom vode, mikroorganizmi koji mu se nalaze na površini mogu prijeći na sudoper i proširiti se po okolnim područjima, prema nekim istraživanjima i do metar udaljenima. Slikoviti: kad perete meso, zapravo prskate klice po kuhinji. 

Studija USDA-e, koja je, doduše, uzela u obzir samo piletinu, pokazala je da se osobe koje peru sirovo meso peradi izlažu većem riziku od bolesti koje se prenose hranom od onih koji to ne rade. Jasno, postoje određene iznimke. Što ako vam je meso palo na pod? 

U tom je slučaju uputno meso oprati, ali u posudi s vodom, a ne pod mlazom, te vodu iskrenuti izravno u slivnik ili u WC školjku te ih, zajedno s posudom, dezinficirati.
