Češnjak je na glasu kao iznimno bogat izvor moćnih sastojaka s povoljnim djelovanjem na zdravlje, a ujedno je jako zgodan aromatičan dodatak jelima i dobro ga je uvijek imati pri ruci u kuhinji. No, zbog navike da ga kupujemo više no što ga stignemo potrošiti ili zbog pogrešaka u skladištenju, često mu se događa da proklija.

Kad primijetite da su vam iz lukovice češnjaka počele rasti male zelene stapke vjerojatno ćete se zapitati smije li se jesti proklijali češnjak?

Odgovor je potvrdan - čak je i proklijali češnjak pogodan za konzumiranje. Ali...

Unatoč tome što klijanje češnjaka ne predstavlja rizik za sigurnost konzumacije, ta pojava može uzrokovati promjenu okusa - proklijali češnjak često ima gorči okus zbog kemijskih procesa do kojih dolazi razvojem klice.

Mladi, svježi češnjak bogat je prirodnim šećerima, no kako češnjak stari i počinje puštati klice, dio šećera i vlage postaje svojevrsno pogonsko gorivo tog procesa.  Kako se šećeri i vlaga troše, režnjevi iz kojih rastu klice postaju smežurani i gorki, a poznata aroma češnjaka oštrija.

Ako ćete s takvim češnjakom kuhati, osobito ako jelo zahtijeva dulju termičku obradu, vjerojatno neće biti problema, osobito ukoliko klice još nisu jako narasle, no za sirova jela i ona koja se kratko kuhaju bolje ga je ne koristiti jer ne možete biti sigurni koliko će promjena njegovog okusa djelovati na konačni okus jela.

Evo još jednog zanimljivog podatka: nedavno objavljena studija pokazala je kako je stariji češnjak bogatiji antioksidansima. Možda bismo se u korist zdravlja trebali odreći dijela okusa?

Češnjak je na glasu kao iznimno bogat izvor moćnih sastojaka s povoljnim djelovanjem na zdravlje, a ujedno je jako zgodan aromatičan dodatak jelima i dobro ga je uvijek imati pri ruci u kuhinji. No, zbog navike da ga kupujemo više no što ga stignemo potrošiti ili zbog pogrešaka u skladištenju, često mu se događa da proklija.

Kad primijetite da su vam iz lukovice češnjaka počele rasti male zelene stapke vjerojatno ćete se zapitati smije li se jesti proklijali češnjak?

Unatoč tome što klijanje češnjaka ne predstavlja rizik za sigurnost konzumacije, ta pojava može uzrokovati promjenu okusa - proklijali češnjak često ima gorči okus zbog kemijskih procesa do kojih dolazi razvojem klice.

Mladi, svježi češnjak bogat je prirodnim šećerima, no kako češnjak stari i počinje puštati klice, dio šećera i vlage postaje svojevrsno pogonsko gorivo tog procesa.  Kako se šećeri i vlaga troše, režnjevi iz kojih rastu klice postaju smežurani i gorki, a poznata aroma češnjaka oštrija.

Ako ćete s takvim češnjakom kuhati, osobito ako jelo zahtijeva dulju termičku obradu, vjerojatno neće biti problema, osobito ukoliko klice još nisu jako narasle, no za sirova jela i ona koja se kratko kuhaju bolje ga je ne koristiti jer ne možete biti sigurni koliko će promjena njegovog okusa djelovati na konačni okus jela.

Evo još jednog zanimljivog podatka: nedavno objavljena studija pokazala je kako je stariji češnjak bogatiji antioksidansima. Možda bismo se u korist zdravlja trebali odreći dijela okusa?
