U zadnjih nekoliko godina, "zahvaljujući" klimatskim promjenama, Dalmatinska zagora postaje svojevrsna Provansa, barem u pogledu maslinarstva.
Nema škrape ni dočića u kojemu danas nećete vidjeti ovaj simbol mira, obilja i vječnosti. Neobično važna i gotovo besmrtna, pustila je svoje korijenje diljem Zagore, područja, kako kažu, na granici opstanka, što svakako ide u prilog i kvaliteti ove glavne uljarice u svakom dalmatinskom kućanstvu.
Unatrag par desetljeća, na određenim nadmorskim visinama, onima od petsto i više metara, mogućnost uzgoja maslina bila je minimalna ili bolje reći neisplativa s obzirom na niske temperature tijekom zimskih mjeseci.
Stoga ni struka ne voli baš govoriti o maslinama u Dalmatinskoj zagori, vele, maslina tamo nikada nije ni bilo, smrznut će se prije ili poslije. Unatoč obeshrabrujućim prognozama, maslinarstvo je u Zagori postalo pravi trend.
Primjer dobroga gospodarenja i još boljeg prinosa vidljiv je i na njivi 85-godišnjeg šestanovačkog maslinara Tončija Litrića.
Prema procjenama, na dvadesetak stabala oblice ove godine ubrat će više od tone i pol maslina, što ne pamti otkad ima masline, a otad su prošla dva desetljeća.
- Bilo je godina, kao ona pretpošla, kada sam imao možda stotinjak kilograma manje, ali ova se baš opoštenila. Ne znam koji su razlozi, govore klimatski, ja ipak vjerujem da bez rada i truda nema ni rezultata. U svom masliniku imam četrdeset stabala isključivo oblice i levantinke. Od toga je njih dvadesetak na rodu. Oblica je maslina sklona našem podneblju, koja u pravilu ne rađa svake godine, dok taj nedostatak nadomješta levantinka. Stoga u zadnje vrijeme nije bilo godine da smo ostali bez ulja. Nekada samo za svoje potrebe, kao što je to bilo prošle godine, a ove ćemo možda nešto i prodati.
Mnogi me pitaju iz kojeg razloga danas ovo naše inače škrto podneblje obiluje maslinicima, a prije tridesetak i više godina njezin opstanak u kamenjaru bio je upitan. I danas je – tvrdi Tonči Litrić i potkrijepljuje to činjenicom kako se radi o graničnom području i samim time surovijem i oštrijem.
- Preživjeti ili propasti, to je cijela mudrolija. Ono što ostane, bez sumnje se može okvalificirati kao ulje iznimne kvalitete i kao takvo može se brendirati kao što to rade naši susjedi Talijani - predložio je Litrić. I dodao:

U zadnjih nekoliko godina, "zahvaljujući" klimatskim promjenama, Dalmatinska zagora postaje svojevrsna Provansa, barem u pogledu maslinarstva.
Nema škrape ni dočića u kojemu danas nećete vidjeti ovaj simbol mira, obilja i vječnosti. Neobično važna i gotovo besmrtna, pustila je svoje korijenje diljem Zagore, područja, kako kažu, na granici opstanka, što svakako ide u prilog i kvaliteti ove glavne uljarice u svakom dalmatinskom kućanstvu.
Unatrag par desetljeća, na određenim nadmorskim visinama, onima od petsto i više metara, mogućnost uzgoja maslina bila je minimalna ili bolje reći neisplativa s obzirom na niske temperature tijekom zimskih mjeseci.
Stoga ni struka ne voli baš govoriti o maslinama u Dalmatinskoj zagori, vele, maslina tamo nikada nije ni bilo, smrznut će se prije ili poslije. Unatoč obeshrabrujućim prognozama, maslinarstvo je u Zagori postalo pravi trend.
Primjer dobroga gospodarenja i još boljeg prinosa vidljiv je i na njivi 85-godišnjeg šestanovačkog maslinara Tončija Litrića.
Prema procjenama, na dvadesetak stabala oblice ove godine ubrat će više od tone i pol maslina, što ne pamti otkad ima masline, a otad su prošla dva desetljeća.
- Bilo je godina, kao ona pretpošla, kada sam imao možda stotinjak kilograma manje, ali ova se baš opoštenila. Ne znam koji su razlozi, govore klimatski, ja ipak vjerujem da bez rada i truda nema ni rezultata. U svom masliniku imam četrdeset stabala isključivo oblice i levantinke. Od toga je njih dvadesetak na rodu. Oblica je maslina sklona našem podneblju, koja u pravilu ne rađa svake godine, dok taj nedostatak nadomješta levantinka. Stoga u zadnje vrijeme nije bilo godine da smo ostali bez ulja. Nekada samo za svoje potrebe, kao što je to bilo prošle godine, a ove ćemo možda nešto i prodati.
Mnogi me pitaju iz kojeg razloga danas ovo naše inače škrto podneblje obiluje maslinicima, a prije tridesetak i više godina njezin opstanak u kamenjaru bio je upitan. I danas je – tvrdi Tonči Litrić i potkrijepljuje to činjenicom kako se radi o graničnom području i samim time surovijem i oštrijem.
- Preživjeti ili propasti, to je cijela mudrolija. Ono što ostane, bez sumnje se može okvalificirati kao ulje iznimne kvalitete i kao takvo može se brendirati kao što to rade naši susjedi Talijani - predložio je Litrić. I dodao:
"Tamo gdje maslinu zima može odnijeti, ona najbolje ulje može donijeti."
