Šparoge - riznica okusa i zdravlja. Ne zaobilazite ih.
Šparoge potječu iz Male Azije, gdje su je uzgajali i jeli prije 2000 godina. Grci i Rimljani također su ih smatrali delikatesom, ali su je koristili i kao lijek za zubobolju i kao zaštitna mjera od uboda pčela.U ostalim dijelovima Starog kontinenta šparoge su postale popularne tek krajem 16. stoljeća.
Danas su najveći proizvođači šparoga Španjolska, Francuska, Austrija, Sjedinjene Američke Države, Meksiko, Peru i Južna Afrika.
Osim uobičajenih zelenih šparoga, kakvim ih nalazimo u prirodi, mogu biti i bijele boje..
Ove bijele boje su od davnina smatrale delikatesom posebno u Europi, gdje su se masovno počele uzgajati krajem 18. stoljeća. Boju dobijaju tako što se nasad prekrije folijom, pa uslijed nedostatka sunčeve svjetlosti biljka ne provodi fotosintezu i tako ostaju bijele boje.
Novitet su - ljubičaste šparoge, koje su intenzivne boje. Manje su vlaknaste od zelenih šparoga, ali sadrže više šećera, pa se mogu jesti sirove. Dijagonalno izrezane kriške s ljubičastim rubom i kremastom jezgrom lijep su ukras za salate i jela s roštilja. Kuhane ljubičaste šparoge blagog su orašastog okusa, a ako ih predugo kuhamo, poprime tamnozelene boje.

Šparoge su poznate kao izuzetno zdrava namirnica koja bi, između ostalog, trebala pomoći kod mnogih tegoba, a dokazano poboljšava spolnu potenciju kod muškaraca! Ova karakteristika je poznata već nekoliko tisuća godina, jer su je i stari Rimljani cijenili i koristili upravo zbog tog afrodizijskog svojstva. Već tada su šparoge također bile zaslužne i za liječenje bubrežnih bolesti. Poznato je da su šparoge izvrstan diuretik, zbog čega se preporučaju i kod groznice te za reduciranje viška vode iz organizma.

Glavni sastojak šparoga, koji im daje brojna ljekovita svojstva, je aspargin koji se nalazi samo u biljnim klicama, i najviše ga ima kod bijelih šparoga.
Svaka zdrava osoba može dnevno konzumirati veću količinu šparoga bez straha od štetnog utjecaja na svoje zdravlje. No, ograničena konzumacija ove biljke preporuča se osobama s povećanom mokraćnom kiselinom i osobama sklonim bubrežnim kamencima, jer veće količine šparoga mogu izazvati napad gihta.
Šparoge su također bogat izvor rutina koji jača stijenke krvnih žila i kapilara. Osim toga, sadrže i glutation – sastojak koji je važan u borbi organizma protiv raka.
Šparoge su poželjan dio jelovnika i zbog toga jer sadrže mnogo vitamina i minerala. Izuzetno su bogate kalijem, fosforom, željezom, bakrom, cinkom i jodom, sadrže folnu kiselinu i puno vitamina C. No, ni tu njihova ljekovitost ne prestaje, jer su i bogat izvor flavonoida, što pomaže u snižavanju krvnog tlaka i kolesterola.
Šparoge svakako pomažu stimiliranju rada bubrega i ubrzanom izlučivanju vode (diuretik). Također doprinose "čišćenju" krvi, ubrzavaju probavu, a preporuča se i osobama sklonim zatvoru, jer sadrži puno dijetalnih vlakana. Neke čajne mješavine protiv bolesti bubrega i mokraćnog mjehura sadrže i korijen šparoga.
Šparoge osim što sadrže aspargin (koji daje karakterističan miris mokraći), sadrže i arginin, glikozid, koniferin, helidonsku kiselinu, kolin, saponine, flavonoide, kiseline, vitamine i minerale (kalij, željezo). Sadrži i šećer, proteine i nešto masti.

Prilikom skladištenja šparoge se vrlo brzo stvrdnu pa ih iskoristite što prije. Ako ih čuvate na sobnoj temperaturi, vrlo brzo izgube čak 50 posto vitamina C.
Prilikom čuvanja preko noći donje krajeve zamotajte u vlažni papirnati ubrus, pokrijte ih folijom i stavite u hladnjak. No, mogu se i uspravno staviti u čašu vode u hladnjaku, pokriti plastičnom vrećicom i čuvati do dva dana.

Juha od šparoga
Sastojci:
1,5 kg zelenih šparoga,
sol,
prstohvat šećera
na vrh noža bijelog papra,
1 žlica jestivog škroba,
100 g kiselog vrhnja,
2 žlice sitno nasjeckanog kopra,
četvrt litre juhe od povrća
Priprema:
Odrežite vrhove šparoga, duge oko 5 centimetara. Preostale šparoge izlomite na komadiće i stavite u lonac zajedno sa solju i šećerom. Sve zajedno prelijte vodom, toliko da šparoge budu pokrivene pa ih poklopite i kuhajte 15 minuta. Prethodno pripremljenu povrtnu juhu zakuhajte, dodajte vrhove šparoga i kuhajte poklopljeno 8 minuta. Komade šparoga usitnite zajedno s vodom u kojoj smo ih kuhali u blenderu.
Vrhove šparoga ocijedite i u juhu od povrća dodajte prethodno napravljenu kašu od šparoga. Po potrebi juhu posolite i popaprite.
Juhu zgusnite jestivim škrobom koji se prethodno pomiješa s malo hladne vode i dodajte kiselo vrhnje. Na kraju u juhu stavite vrhove šparoga i opet sve brzo zagrijte. Prije posluživanja juhu pospite nasjeckanim koprom.

Šparoge - riznica okusa i zdravlja. Ne zaobilazite ih.
Šparoge potječu iz Male Azije, gdje su je uzgajali i jeli prije 2000 godina. Grci i Rimljani također su ih smatrali delikatesom, ali su je koristili i kao lijek za zubobolju i kao zaštitna mjera od uboda pčela.U ostalim dijelovima Starog kontinenta šparoge su postale popularne tek krajem 16. stoljeća.
Danas su najveći proizvođači šparoga Španjolska, Francuska, Austrija, Sjedinjene Američke Države, Meksiko, Peru i Južna Afrika.
Osim uobičajenih zelenih šparoga, kakvim ih nalazimo u prirodi, mogu biti i bijele boje..
Ove bijele boje su od davnina smatrale delikatesom posebno u Europi, gdje su se masovno počele uzgajati krajem 18. stoljeća. Boju dobijaju tako što se nasad prekrije folijom, pa uslijed nedostatka sunčeve svjetlosti biljka ne provodi fotosintezu i tako ostaju bijele boje.
Novitet su - ljubičaste šparoge, koje su intenzivne boje. Manje su vlaknaste od zelenih šparoga, ali sadrže više šećera, pa se mogu jesti sirove. Dijagonalno izrezane kriške s ljubičastim rubom i kremastom jezgrom lijep su ukras za salate i jela s roštilja. Kuhane ljubičaste šparoge blagog su orašastog okusa, a ako ih predugo kuhamo, poprime tamnozelene boje.

Šparoge su poznate kao izuzetno zdrava namirnica koja bi, između ostalog, trebala pomoći kod mnogih tegoba, a dokazano poboljšava spolnu potenciju kod muškaraca! Ova karakteristika je poznata već nekoliko tisuća godina, jer su je i stari Rimljani cijenili i koristili upravo zbog tog afrodizijskog svojstva. Već tada su šparoge također bile zaslužne i za liječenje bubrežnih bolesti. Poznato je da su šparoge izvrstan diuretik, zbog čega se preporučaju i kod groznice te za reduciranje viška vode iz organizma.

Glavni sastojak šparoga, koji im daje brojna ljekovita svojstva, je aspargin koji se nalazi samo u biljnim klicama, i najviše ga ima kod bijelih šparoga.
Svaka zdrava osoba može dnevno konzumirati veću količinu šparoga bez straha od štetnog utjecaja na svoje zdravlje. No, ograničena konzumacija ove biljke preporuča se osobama s povećanom mokraćnom kiselinom i osobama sklonim bubrežnim kamencima, jer veće količine šparoga mogu izazvati napad gihta.
Šparoge su također bogat izvor rutina koji jača stijenke krvnih žila i kapilara. Osim toga, sadrže i glutation – sastojak koji je važan u borbi organizma protiv raka.
Šparoge su poželjan dio jelovnika i zbog toga jer sadrže mnogo vitamina i minerala. Izuzetno su bogate kalijem, fosforom, željezom, bakrom, cinkom i jodom, sadrže folnu kiselinu i puno vitamina C. No, ni tu njihova ljekovitost ne prestaje, jer su i bogat izvor flavonoida, što pomaže u snižavanju krvnog tlaka i kolesterola.
Šparoge svakako pomažu stimiliranju rada bubrega i ubrzanom izlučivanju vode (diuretik). Također doprinose "čišćenju" krvi, ubrzavaju probavu, a preporuča se i osobama sklonim zatvoru, jer sadrži puno dijetalnih vlakana. Neke čajne mješavine protiv bolesti bubrega i mokraćnog mjehura sadrže i korijen šparoga.
Šparoge osim što sadrže aspargin (koji daje karakterističan miris mokraći), sadrže i arginin, glikozid, koniferin, helidonsku kiselinu, kolin, saponine, flavonoide, kiseline, vitamine i minerale (kalij, željezo). Sadrži i šećer, proteine i nešto masti.

Prilikom skladištenja šparoge se vrlo brzo stvrdnu pa ih iskoristite što prije. Ako ih čuvate na sobnoj temperaturi, vrlo brzo izgube čak 50 posto vitamina C.
Prilikom čuvanja preko noći donje krajeve zamotajte u vlažni papirnati ubrus, pokrijte ih folijom i stavite u hladnjak. No, mogu se i uspravno staviti u čašu vode u hladnjaku, pokriti plastičnom vrećicom i čuvati do dva dana.

Juha od šparoga
Sastojci:
1,5 kg zelenih šparoga,
sol,
prstohvat šećera
na vrh noža bijelog papra,
1 žlica jestivog škroba,
100 g kiselog vrhnja,
2 žlice sitno nasjeckanog kopra,
četvrt litre juhe od povrća
Priprema:
Odrežite vrhove šparoga, duge oko 5 centimetara. Preostale šparoge izlomite na komadiće i stavite u lonac zajedno sa solju i šećerom. Sve zajedno prelijte vodom, toliko da šparoge budu pokrivene pa ih poklopite i kuhajte 15 minuta. Prethodno pripremljenu povrtnu juhu zakuhajte, dodajte vrhove šparoga i kuhajte poklopljeno 8 minuta. Komade šparoga usitnite zajedno s vodom u kojoj smo ih kuhali u blenderu.
Vrhove šparoga ocijedite i u juhu od povrća dodajte prethodno napravljenu kašu od šparoga. Po potrebi juhu posolite i popaprite.
Juhu zgusnite jestivim škrobom koji se prethodno pomiješa s malo hladne vode i dodajte kiselo vrhnje. Na kraju u juhu stavite vrhove šparoga i opet sve brzo zagrijte. Prije posluživanja juhu pospite nasjeckanim koprom.
