Kada je najbolje posoliti ribu, jedno je od pitanja s kojima se svi susrećemo kad se tek upoznajemo s kužinavanjem, no ova tema također je predmet spora među prekaljenim meštrima od kužine. Mnogi, naime, upozoravaju da je postupak kojem neki pribjegavaju nastojeći postići bolji okus i čvršću teksturu zapravo potpuna glupost koja može rezultirati kulinarskom katastrofom.

Opće pravilo za pripremu ribe glasi da se riba soli prije pripreme, a upravo je uz soljenje unaprijed vezana sporna caka o kojoj je ovdje riječ. Prema savjetu kojem se pribjegava u nastojanju da se kvaliteta ribe poboljša, potrebno ju je posoliti čak četiri sata unaprijed.

Na taj se način, kako se objašnjava, omogućuje soli da izvuče iz ribe suvišnu vlagu, što ribu u konačnici čini ukusnijom, a njeno meso čvrščim. Ovaj se postupak osobito preporučuje kad je riječ o odleđenoj ribi, jer kao što je poznato, riba "iz leda" nakon otapanja zna imati kašasto meso.

Odlučite li isprobati ovaj savjet, budite na oprezu. Većina kuhara upozorava da su četiri sata previše te da će konačni rezultat biti stupast i neprivlačan za jelo pa preporučuju da se riba posoli pola sata do sat vremena prije pripreme. Na taj će način, objašnjavaju, sol prodrijeti u meso u sasvim dovoljnoj mjeri, ali iz njega neće izvući previše vlage.

Neki ipak preporučuju soljenje (puno) unaprijed i preporučuju ga za vrste riba poput bakalara i škrpine no upozoravaju da je na taj način obrađenu ribu potrebno termički obraditi na osobit način: umjesto pečenja i grilanja, koje će ih dodatno isušiti, preporučuju kuhanje u jelima poput brujeta. Razumljivo, jer teško da će se na taj način isušiti, a kod pripreme takvih jela uvijek postoji opasnost da će se riba previše raspasti.

Kada je najbolje posoliti ribu, jedno je od pitanja s kojima se svi susrećemo kad se tek upoznajemo s kužinavanjem, no ova tema također je predmet spora među prekaljenim meštrima od kužine. Mnogi, naime, upozoravaju da je postupak kojem neki pribjegavaju nastojeći postići bolji okus i čvršću teksturu zapravo potpuna glupost koja može rezultirati kulinarskom katastrofom.

Opće pravilo za pripremu ribe glasi da se riba soli prije pripreme, a upravo je uz soljenje unaprijed vezana sporna caka o kojoj je ovdje riječ. Prema savjetu kojem se pribjegava u nastojanju da se kvaliteta ribe poboljša, potrebno ju je posoliti čak četiri sata unaprijed.

Na taj se način, kako se objašnjava, omogućuje soli da izvuče iz ribe suvišnu vlagu, što ribu u konačnici čini ukusnijom, a njeno meso čvrščim. Ovaj se postupak osobito preporučuje kad je riječ o odleđenoj ribi, jer kao što je poznato, riba "iz leda" nakon otapanja zna imati kašasto meso.

Odlučite li isprobati ovaj savjet, budite na oprezu. Većina kuhara upozorava da su četiri sata previše te da će konačni rezultat biti stupast i neprivlačan za jelo pa preporučuju da se riba posoli pola sata do sat vremena prije pripreme. Na taj će način, objašnjavaju, sol prodrijeti u meso u sasvim dovoljnoj mjeri, ali iz njega neće izvući previše vlage.

Neki ipak preporučuju soljenje (puno) unaprijed i preporučuju ga za vrste riba poput bakalara i škrpine no upozoravaju da je na taj način obrađenu ribu potrebno termički obraditi na osobit način: umjesto pečenja i grilanja, koje će ih dodatno isušiti, preporučuju kuhanje u jelima poput brujeta. Razumljivo, jer teško da će se na taj način isušiti, a kod pripreme takvih jela uvijek postoji opasnost da će se riba previše raspasti.
