Kostorog (Balistes capriscus, Gmelin, 1789) je riba koja često izaziva polemike oko otrovnosti. Premda obitelj kostorožaca (Balistidae) ima 12 rodova i 42 vrste, samo je ovaj kostorog stalni stanovnik našeg mora.

Kao riba koja temeljno preferira topla mora, u našem je moru, zahvaljujući globalnom zatopljenju, na udicama sve češći, ponajprije u južnom Jadranu, i premda rijetko, povremeno čak i na krajnjem sjeveru Jadrana. Nalazimo ga od najplićeg mora do 100 metara dubine. Inače je stalni stanovnik Mediterana i Jonskog mora.

Hrvatski naziv duguje velikoj prvoj šipčici prve leđne peraje koja je zapravo jaka i velika koštana bodlja nalik na rog. Inače je u svijetu kostorog poznatiji kao hogfish, ili peixe-porco, jer se nakon izvlačenja glasa zvukovima koji su vrlo nalik svinjskom roktanju.

Bodlja zaponac

Latinski naziv, pak, duguje također prvoj leđnoj peraji koja je njemačkog prirodnjaka Johanna Friedricha Gmelina davne 1788. godine asocirala na okidač (lat. balista, ballista= katapult). Naime, prva leđna peraja ima manju bodlju koja kao zaponac drži veliku prvu bodlju, a koja se aktivira samo kada se riba nađe u opasnosti.

Kostorog može narasti do šest kilograma težine. Ima romboidno oblikovano tijelo spljošteno na bokovima. Peraje su velike i dobro razvijene. Koža je iznimno tvrda, možda i najtvrđa među manjim ribama, gusto pokrivena grubim plakoidnim ljuskama koje su na dodir oštre i hrapave poput brusnog papira. Koža skriva i brojne žlijezde zahvaljujući kojima se u kratkom vremenu kostorog može potpuno obložiti sa sluzi. Boja tijela može varirati od žućkaste do crnoljubičaste.

Glava je u kostoroga velika i zauzima jednu trećinu tijela. Usta, premda nerazmjerno mala, imaju osobito snažan čeljusni aparat. U svakoj vilici ima osam jakih i oštrih zuba kojima bez problema drobi oklope rakova, ježeva i drugih beskralježnjaka. Također će s lakoćom pregristi i najdeblji monofil.

Pri skidanju s udice treba biti vrlo oprezan jer kostorog može ugristi, što s obzirom na oštrinu zuba i snagu čeljusti nije nimalo ugodno iskustvo. Inače se smatra vrlo agresivnom ribom, pogotovo u doba mrijesta, kada odrasli mužjaci ne prežu napasti ni ronioca koji se odviše približio teritoriju mrijesta.

Zasebna rotacija

Posebno je zanimljiva činjenica da svako oko mogu rotirati zasebno, neovisno o položaju drugog oka. Nedorasli primjerci se često zadržavaju u manjim grupama, dok su odrasle jedinke samotari.

Sve kostoroge se laički općenito smatra otrovnima, pri čemu se otrovnost povezuje s nervnim ribljim otrovom ciguaterom, koji je, pak, prisutan ponajprije u tropima kao posljedica prijenosa hranidbenim lancem od herbivora do karnivora.

Naime, ciguatera je otrov koji se taloži u tkivu riba koje konzumiraju dinoflagelate vrste Gambierdicus toxicus (Adachi and Fukuyo, 1979), a čiji su nalazi potvrđeni u tropskim i suptropskim morima. Također do intoksikacije može doći konzumiranjem toksičnih herbivornih riba.

U znanstvenoj literaturi je prisutan samo jedan podatak kojim se potvrđuje prisutnost tog otrova u mesu kostoroga. No isto tako ne postoji ni jedan podatak koji bi potvrdio prisutnosti toksičnih dinoflagelata u našemu moru. Činjenica je da se kostorog hrani prvenstveno bentoskim beskralježnjacima, dok se tek manji broj tropskih vrsta povremeno hrani i algama.

Ipak istraživanja provedena u tom smjeru pokazala su da je meso kostoroga zapravo jestivo, pa je u tom smislu i naš jadranski kostorog jestiv, i to praktički oduvijek, jer su i arheološki nalazi potvrdili da je kostorog bio na meniju ljudi već u ranom neolitiku, još 8000 godina prije Krista.

Portugalski poučak

Analizom je, pak, utvrđeno da meso kostoroga sadrži visok udio proteina, dok se prema sadržaju masnih kiselina u mesu ne razlikuje od mesa bakalara što mu svakako diže cijenu. U Portugalu je tako, primjerice, kostorog posebno cijenjen gdje je u stalnoj ponudi na ribarnicama.

Ipak, o kvaliteti mesa i ukusu ove ribe mišljenja su kod naših ribara podijeljena, i to ponajprije zato jer je malo ljudi imalo uopće priliku jesti kostoroga, pri čemu dobar dio tih obroka nije bio oderan. Naime, prije pripreme kostorogu svakako valja oderati tvrdu i nejestivu kožu koja do krajnosti kvari gastronomski doživljaj.

Inače se može konzumirati svjež, dimljen, sušen i soljen, pri čemu je, prema riječima bonkulovića, najukusniji filetiran pa pržen ili pohan.

Dakle, konačan zaključak je da meso jadranskoga kostoroga svakako nije otrovno. Ono što je kod kostoroga uistinu opasno i čega se treba čuvati jesu njegove snažne čeljusti i oštri zubi te jaka bodlja na leđima čiji vam ubod može pružiti iznimno bolno iskustvo.

Kostorog (Balistes capriscus, Gmelin, 1789) je riba koja često izaziva polemike oko otrovnosti. Premda obitelj kostorožaca (Balistidae) ima 12 rodova i 42 vrste, samo je ovaj kostorog stalni stanovnik našeg mora.

Kao riba koja temeljno preferira topla mora, u našem je moru, zahvaljujući globalnom zatopljenju, na udicama sve češći, ponajprije u južnom Jadranu, i premda rijetko, povremeno čak i na krajnjem sjeveru Jadrana. Nalazimo ga od najplićeg mora do 100 metara dubine. Inače je stalni stanovnik Mediterana i Jonskog mora.

Hrvatski naziv duguje velikoj prvoj šipčici prve leđne peraje koja je zapravo jaka i velika koštana bodlja nalik na rog. Inače je u svijetu kostorog poznatiji kao hogfish, ili peixe-porco, jer se nakon izvlačenja glasa zvukovima koji su vrlo nalik svinjskom roktanju.

Bodlja zaponac

Latinski naziv, pak, duguje također prvoj leđnoj peraji koja je njemačkog prirodnjaka Johanna Friedricha Gmelina davne 1788. godine asocirala na okidač (lat. balista, ballista= katapult). Naime, prva leđna peraja ima manju bodlju koja kao zaponac drži veliku prvu bodlju, a koja se aktivira samo kada se riba nađe u opasnosti.

Kostorog može narasti do šest kilograma težine. Ima romboidno oblikovano tijelo spljošteno na bokovima. Peraje su velike i dobro razvijene. Koža je iznimno tvrda, možda i najtvrđa među manjim ribama, gusto pokrivena grubim plakoidnim ljuskama koje su na dodir oštre i hrapave poput brusnog papira. Koža skriva i brojne žlijezde zahvaljujući kojima se u kratkom vremenu kostorog može potpuno obložiti sa sluzi. Boja tijela može varirati od žućkaste do crnoljubičaste.

Glava je u kostoroga velika i zauzima jednu trećinu tijela. Usta, premda nerazmjerno mala, imaju osobito snažan čeljusni aparat. U svakoj vilici ima osam jakih i oštrih zuba kojima bez problema drobi oklope rakova, ježeva i drugih beskralježnjaka. Također će s lakoćom pregristi i najdeblji monofil.

Pri skidanju s udice treba biti vrlo oprezan jer kostorog može ugristi, što s obzirom na oštrinu zuba i snagu čeljusti nije nimalo ugodno iskustvo. Inače se smatra vrlo agresivnom ribom, pogotovo u doba mrijesta, kada odrasli mužjaci ne prežu napasti ni ronioca koji se odviše približio teritoriju mrijesta.

Zasebna rotacija

Posebno je zanimljiva činjenica da svako oko mogu rotirati zasebno, neovisno o položaju drugog oka. Nedorasli primjerci se često zadržavaju u manjim grupama, dok su odrasle jedinke samotari.

Sve kostoroge se laički općenito smatra otrovnima, pri čemu se otrovnost povezuje s nervnim ribljim otrovom ciguaterom, koji je, pak, prisutan ponajprije u tropima kao posljedica prijenosa hranidbenim lancem od herbivora do karnivora.

Naime, ciguatera je otrov koji se taloži u tkivu riba koje konzumiraju dinoflagelate vrste Gambierdicus toxicus (Adachi and Fukuyo, 1979), a čiji su nalazi potvrđeni u tropskim i suptropskim morima. Također do intoksikacije može doći konzumiranjem toksičnih herbivornih riba.

U znanstvenoj literaturi je prisutan samo jedan podatak kojim se potvrđuje prisutnost tog otrova u mesu kostoroga. No isto tako ne postoji ni jedan podatak koji bi potvrdio prisutnosti toksičnih dinoflagelata u našemu moru. Činjenica je da se kostorog hrani prvenstveno bentoskim beskralježnjacima, dok se tek manji broj tropskih vrsta povremeno hrani i algama.

Ipak istraživanja provedena u tom smjeru pokazala su da je meso kostoroga zapravo jestivo, pa je u tom smislu i naš jadranski kostorog jestiv, i to praktički oduvijek, jer su i arheološki nalazi potvrdili da je kostorog bio na meniju ljudi već u ranom neolitiku, još 8000 godina prije Krista.

Portugalski poučak

Analizom je, pak, utvrđeno da meso kostoroga sadrži visok udio proteina, dok se prema sadržaju masnih kiselina u mesu ne razlikuje od mesa bakalara što mu svakako diže cijenu. U Portugalu je tako, primjerice, kostorog posebno cijenjen gdje je u stalnoj ponudi na ribarnicama.

Ipak, o kvaliteti mesa i ukusu ove ribe mišljenja su kod naših ribara podijeljena, i to ponajprije zato jer je malo ljudi imalo uopće priliku jesti kostoroga, pri čemu dobar dio tih obroka nije bio oderan. Naime, prije pripreme kostorogu svakako valja oderati tvrdu i nejestivu kožu koja do krajnosti kvari gastronomski doživljaj.

Inače se može konzumirati svjež, dimljen, sušen i soljen, pri čemu je, prema riječima bonkulovića, najukusniji filetiran pa pržen ili pohan.

Dakle, konačan zaključak je da meso jadranskoga kostoroga svakako nije otrovno. Ono što je kod kostoroga uistinu opasno i čega se treba čuvati jesu njegove snažne čeljusti i oštri zubi te jaka bodlja na leđima čiji vam ubod može pružiti iznimno bolno iskustvo.
