Banane prijete da će se pokvariti? Kupili ste previše piletine na akciji? Ostalo vam je juhe? Nema problema, sve to može u zamrzivač. I, kako bi rekli u reklamama, to nije sve. Raspon stvari koje se mogu pohraniti "u ledu" je nevjerojatno raznolik, a zamrzavanje je tako jednostavan način za produžite rok trajanja hrane, spriječiti da ostaci odu u otpad i uštediti vrijeme na pripremi tijekom napornih radnih dana. Hrana koja je već jednom odmrznuta

Osim ako vam je svejedno što riskirate trovanje hranom, ovom ćete pothvatu obratiti veliku pažnju. Raspon stvari koje se mogu pohraniti "u ledu" je nevjerojatno raznolik, a zamrzavanje je tako jednostavan način za produžite rok trajanja hrane, spriječiti da ostaci odu u otpad i uštediti vrijeme na pripremi tijekom napornih radnih dana. Zapravo, toliko je zgodno, da ponekad zaboravimo da u zamrzivač ne ide baš sve što nam padne pod ruku.

Preciznije, baš sva se hrana može smrznuti, ali zamrzavanje će nekim namirnicama jako narušiti kvalitetu. Za sve je kriva voda koju gotovo sve namirnice sadrže u većoj ili manjoj mjeri: kad se smrzne, voda se širi, što na mikrorazini rezultira pucanjem staničnih stijenki i posljedičnom promjenom teksture, uslijed čega se nepopravljivo narušavaju izgled hrane i svojstva poput kremoznosti i hrskavosti, koje toliko volimo, ali dolazi do pada hranjivih vrijednosti.

Čak nas i hrana koja inače dobro podnosi zamrzavanje može razočarati nakon što je odmrznuta jer ako je neadekvatno pohranjena može poprimiti neugodan miris ili se oštetiti ako se zalijepi za stijenke hladnjaka ili za drugu pohranjenu hranu, no izdvojlili smo nekoliko namirnica koje nije mudro ubaciti "u led", bez obzira kako ih dobro zamotali i ušuškali.

Hrana koja je već jednom odmrznuta

Osim ako vam je svejedno što riskirate trovanje hranom, ovom ćete pothvatu obratiti veliku pažnju. Ponajprije, budite sigurni da je hrana propisno odmrznuta - nipošto na sobnoj temperaturi ili ne daj bolže u zdjeli s mlakom vodom - jer može doći do nekontroliranog množenja bakterija. Nadalje, provjerite da nije riječ o nekoj od namirnica s ovog popisa.

Krem juhe

Iako se juhe i temeljci jako dobro smrzavaju, za sve što sadrži mlijeko i mliječne proizvode postoji opasnost od zgrušavanja ili odvajanja.

Umaci ili umaci

Nisu samo umaci na bazi vrhnja problematični, čak i oni zgusnuti škrobom poput gustina mogli bi po odmrzavanju postati vodenasti. Zamrzavanje slabi vezu između škroba i vlage koju apsorbira, što odmrznute umake čini "tankima".

Kuhana riba

Lešo mola i slična jela pojedite odmah ili u roku četiri dana, onako samog ili, ako vam dosadi kao dodatak salatama, paštetama i ribljim polpeticama. Led mu neće prijati. Bez masnoće koja djeluje kao izolator, riba se može natopiti vodom, što će, nakon odmrzavanja, vjerojatno rezulti kašastom teksturom..

Zelena salata

Brojno povrće jako dobro podnosi led, ali zelena salata, zbog velikog udjela vode, nije među njima. Ako vam je netko poslao ogromnu kesu domaće salate, radije je što brže iskoristite i podijelite s prijateljima nego da je pokušate sačuvati u ledu.

Kuhana tjestenina ili riža

Kao što je već spomenuto, škrob je problematičan za zamrzavanje i premda se to ne mora dogoditi, postoji opasnost da se vaš fini rižot nakon odmrzavanja pretvori u kašicu. Ostatke, stoga, radije iskoristite na drugi način - od tjestenine napravite bogatu salatu, a od riže okruglice.

Majoneza i preljevi na bazi majoneze

Ovo također nije dobra ideja jer postoji velika vjerojatnost da će se emulzije u majonezi razdvojiti uslijed zamrzavanja i odmrzavanja.
